Abstract
⸠Duplex W1/O/W2 emulsions prepared with high-shear and membrane techniques. ⸠At high shear stress droplet size driven by the rate of interfacial tension decrease. ⸠Lowest salt release from W1/O/W2 occurs during rotating membrane emulsification. ⸠Salt encapsulation is largely compromised by semi-batch cross-flow emulsification.
