Abstract
► We have screened 135 non-Saccharomyces yeasts for fructanase and fructosyltransferase activity. ► We have found new fructan-hydrolase producers with exo and endo-hydrolase activity. ► We have found new fructosyltransferase producers yeasts. ► These enzymes have industrial applications in fructan hydrolysis and prebiotic production.
