Abstract
⺠Caldicellulosiruptor saccharolyticus cellobiose-2-epimerase produced lactulose. ⺠The enzyme synthesized first lactulose using the single substrate lactose. ⺠The enzyme produced also epilactose as another bifidus factor. ⺠Lactulose production by the enzyme is the highest among enzymatic syntheses.
