Abstract
⺠The sequential dehydration process of insulin crystals has been investigated. ⺠Different kinds of hydration water were observed to be lost step by step. ⺠The hydration water significantly affects the environments of Tyr residues. ⺠The loss of the hydration water leads to changes in the secondary structure.
