Abstract
⺠Simultaneous hydrolysis of β-LG and fractionation of generated peptides. ⺠Simultaneous separation of anionic and cationic peptides generated. ⺠15 Anionic peptides were recovered with migration rates between 5.5% and 81.7%. ⺠The cationic peptide sequence ALPMHIR was recovered with a 66% migration rate. ⺠First time that hydrolysis was conducted under an electric field.
