Abstract
⺠Markers of in vitro digestion mainly linked to detoxification proteins. ⺠In vitro digestion rate is likely affected by in vivo muscle contraction power. ⺠Indoor-reared pigs gave muscle less oxidised and denatured. ⺠Indoor-rearing promoted over expression of chaperone proteins.
