Abstract
► Recovery of seed phenolics was optimised by varying crucial extraction parameters. ► Phenolic compounds were almost exclusively located in the hulls. ► POPj formation markedly differed for the investigated apple seed extracts. ► Seed extracts are a promising source for the recovery of natural yellow colourants.
