Abstract
⺠Sorption kinetics and equilibrium partitioning of food aroma compounds in bioplastics. ⺠Gliadin and chitosan films show low sorption and partitioning capacities of food aroma compounds. ⺠Sorption and diffusion depend on volatile chemical structure, film composition and moisture. ⺠Great potential in packaging of foods in which aroma is an important quality attribute.
