Abstract
⺠The pumpkin polysaccharides were proved to have inhibitory effect on AGEs formation. ⺠The pumpkin polysaccharides were found to have inhibitory effect on aldose reductase. ⺠This is the first time polysaccharides were found to inhibit aldose reductase.
