Abstract
► Hydrolysis of coconut fat was performed with Yarrowia lipolytica in solid state cultivation. ► Lipolytic potential was evaluated at different water activity levels and cultivation time. ► Chemical characterisation of fatty acids was done by GC-MS. ► Antimicrobial activity of hydrolysates was tested against some food-borne bacteria. ► These hydrolysates can be used for food biopreservation.
