Abstract
⺠Hydrolysis of coconut fat was performed with Yarrowia lipolytica in solid state cultivation. ⺠Lipolytic potential was evaluated at different water activity levels and cultivation time. ⺠Chemical characterisation of fatty acids was done by GC-MS. ⺠Antimicrobial activity of hydrolysates was tested against some food-borne bacteria. ⺠These hydrolysates can be used for food biopreservation.
