Abstract
⺠We investigated the extraction of Northern shrimp by-products using supercritical CO2. ⺠The oil extracted was rich in omega-3 polyunsaturated fatty acids. ⺠The oil can be produced by the Inuit of Northern Quebec as a natural health product.
