Abstract
⺠High-pressure treatment of β-lactoglobulin induces the formation of aggregates. ⺠The aggregate diameters are ranging from 24 to 255 nm in diameter. ⺠β-Lactoglobulin aggregates are efficient retinol and β-carotene carriers. ⺠33% of Total β-carotene are gradually released during gastro-duodenal digestion.
