Abstract
⺠A new property of TreS from Thermus thermophilus HB-8 was found and described. ⺠Enzyme protein can act on sucrose and catalyze trehalulose formation. ⺠A simple, fast, and efficient process on producing and purifying trehalulose. ⺠Other sugars were removed, while trehalulose was preserved by S. cerevisiae cells.
