Abstract
⺠Novel antioxidant peptides extracted, purified and identified in Spanish dry-cured ham. ⺠Ham peptides assayed for DPPH radical-scavenging assay and reducing power. ⺠Spanish dry-cured ham as a source of antioxidant peptides naturally generated during the dry-curing process.
