Abstract
⺠Lentil sprouts contain high amounts of starch, including resistant starch. ⺠Germination increase starch bioavailability and reduce α-amylase inhibitors activity. ⺠α-Amylase inhibitors activity and resistant starch content influence on starch bioavailability. ⺠Elicitation allows diversifying starch content and expected glycemic index values.
