Abstract
► UV-C light treatment did not impair cyto-/genotoxic effects in egg products. ► TBARS values in UV-treated eggs increased as the radiation doses increased. ► Protein oxidation increased as the radiation increased. ► Lipid and protein oxidation in UV treated eggs are lower than to heat treated egg.
