Abstract
► Gochujang is a Korean fermented red pepper paste. ► Two diterpene glycosides were isolated from gochujang and structurally elucidated. ► The origin of isolated compounds was red pepper. ► The isolated compounds significantly inhibited CuSO4-induced rat plasma oxidation. ► The activity of isolated compound 1 was comparable to that of (+)-catechin.
