Abstract
⺠Gochujang is a Korean fermented red pepper paste. ⺠Two diterpene glycosides were isolated from gochujang and structurally elucidated. ⺠The origin of isolated compounds was red pepper. ⺠The isolated compounds significantly inhibited CuSO4-induced rat plasma oxidation. ⺠The activity of isolated compound 1 was comparable to that of (+)-catechin.
