Abstract
⺠The antioxidant capacity of whole oat grain extracts of seven varieties was evaluated by the ORAC assay. ⺠Total phenolics, avenanthramides and tocols were also measured in all seven oat varieties. ⺠Extracts from oat varieties CDC Dancer and CDC Deiter inhibited TNF-α induced NF-κB activation in human 293T cells.
