Abstract
► The effects of calcium salts on in vitro lipid digestion were examined in emulsions. ► The kinetics of the total and individual free fatty acids released were monitored. ► The effect of calcium depends on emulsifying agent and phosphate at aqueous phase. ► Soluble calcium salts had greater effects on the lipolysis. ► Calcium did not alter the profiles of the individual free fatty acids released.
