Abstract
⺠No effect of blanching both during spinach freezing process and green beans canning process. ⺠Folate loss occurs during washing step for spinach freezing process. ⺠Folate loss occurs after sterilisation for green beans canning process with a leaching of folate to the covering liquid. ⺠The main folate derivative in spinach and green beans is 5-CH3-H4folate.
