► No effect of blanching both during spinach freezing process and green beans canning process. ► Folate loss occurs during washing step for spinach freezing process. ► Folate loss occurs after sterilisation for green beans canning process with a leaching of folate to the covering liquid. ► The main folate derivative in spinach and green beans is 5-CH3-H4folate.
