Abstract
⺠In vitro bioavailability of Se from seafood was assessed by a simulated dialysis method. ⺠Low bioavailability percentages (4.0-13%) were assessed. ⺠HPLC-MS data confirmed SeMet oxidation during the in vitro procedure. ⺠The major Se species in the dialyzate is SeMet.
