Abstract
⺠Quantification of 14 choline-related compounds or phospholipid classes is achieved. ⺠The validated method uses a single hydrophilic interaction (HILIC) LC-MS/MS run. ⺠Choline, betaine and phospholipid classes are extracted by a single phase solvent. ⺠Phospholipid quantification is consistent with 31P NMR data. ⺠Total choline measurements in foods consistent with USDA choline database.
