Abstract
- A simple method is proposed to quantify trace 5-HMF in honey and beverages.
- The method is based on the complexation of 5-HMF with p-NPH at pH 4.0.
- It is an interesting study with a significant impact on food safety.
- Detection limit, 1.96 μg Lâ1, in linear range of 6.5-275 μg Lâ1.
- The method also can be extended to 5-HMF determination in real time samples.
