Abstract
⺠Wheat grain proteins were quantitatively analyzed. ⺠Data-independent mass spectrometry approach was used. ⺠The concentrations for celiac disease and baker's asthma proteins were determined. ⺠Technical coefficients of variation ranged from 0.12 to 1.39.
