Abstract
Docosahexaenoic acid undergoes enzymatic oxidation by Soybean lipoxidase type V enzyme to yield primary oxidation products. The reaction is monitored by UV-Vis spectrum, as the continuous and steady increase in absorption at 234â¯nm. Distinct peaks are shown by these oxidation products in HPLC and FTIR, which are identified as aldehydes. These products were found to be toxic to various cell types. Further, these oxidation products are allowed to auto-decompose under physiological conditions over time. The 72â¯h decomposition products are also toxic to cells; however, the 1â¯week decomposition products that are rich in acids and acid derivatives, showed less toxicity in cells.257
