Abstract
Based on the Hofmann reaction, acrylamide was degraded to generate vinyl amine, and pyrrolinone was produced when the vinyl amine reacted with fluorescamine, resulting in a strong fluorescence emission at 480Â nm. The proposed method was successfully applied in acrylamide determination in complex heat-processed food matrices.108
