Abstract
⺠Source, toxicity and occurrence of polycyclic aromatic hydrocarbons (PAHs) were reviewed giving the most important references. ⺠An overview on the legislation process occurred over the years in the European Union were summarized. ⺠Both liquid chromatographic and gas chromatographic methods for PAH analysis were described. ⺠A large part of the work was devoted to sample preparation techniques both for non-fatty and fatty foods. ⺠-Hyphenated techniques were briefly described.
