Abstract
► 3-methyl-2-butene-1-thiol was unequivocally identified for the first time in wine. ► This powerful odorant presented an odor threshold in wine of 0.5-1 ng L−1. ► An analytical method has been validated to obtain quantitative data at ng L−1 level. ► Concentrations around 1 ng L−1 have been found in some Prieto Picudo wines.
