Abstract
⺠Practical and easy analytical methods to study the degradation of edible oils during heating. ⺠Nigella seed extract improves the thermal stability and the shelf-life of the oils. ⺠ICA of the front-face 3D-fluorescence spectra facilitates their interpretation.
