Abstract
⺠A fast CE method was developed for determination of three sugars in honey samples. ⺠Peakmaster® software was used to optimize the BGE composition. ⺠Under optimized CE conditions, separation of the sugars was achieved in less than 2 min. ⺠The method was validated and successfully applied to seven multifloral honey samples. ⺠Samples were dissolved in H2O, filtered and injected with other no pretreatment required.
