Abstract
												⺠Biotransformation of selenium, added as selenite, during brewing has been studied. ⺠An analytical methodology based on different sample treatment methods and on line coupling anion exchange-ICP-MS was used. ⺠Biotransformation of selenite during Lager or Ale fermentation (S. cerevisiae or S. uvarum) leads to SeMet in Se-beer. ⺠Brewing is an example how yeast is able to transform inorganic selenium to bioactive organo-Se compounds.
