Abstract
⺠The data shows the bread has the highest concentration of Cu, Fe and Mn. ⺠The total daily intake of Cu, Fe, Mo, Mn, and Zn for the Lebanese population is mostly provided by bread (136.8 g dayâ1) comparing to other food commodities as cheese, vegetables and fruits. ⺠Bioaccessibility of nutrient elements varies with elements, its concentration and nature of consumed commodities.
