- Noncovalent binding with arabinogalactan and glycyrrhizin enhances water solubility and oxidation stability of carotenoids.
- Noncovalent binding with glycyrrhizin increases antioxidant activity of selected carotenoids.

- Formation of inclusion complexes prevents aggregation of xanthophyll carotenoids in aqueous solutions.
