Abstract
- Polysaccharides can be obtained from oligosaccharides by dry thermal treatment.
- Transglycosylation reactions were observed using arabinotriose and mannotriose as models.
- New glycosidic linkages can be formed by dry thermal treatment.
- Isomerization, oxidation and decarboxylation reactions origin new sugar residues.
- Similar reactions were observed in model compounds and in roasted coffee polysaccharides.
