Abstract
⺠OS starch showed different results by irradiation according to amylose content. ⺠Irradiation decreased pasting properties, especially in waxy rice starch. ⺠Higher dose (50 kGy at this research) degraded the starch chains as well as OS groups, resulting in crystallinity decrease. ⺠10 kGy irradiation was seemed to be a good method for effective OS rice dextrin.
