Abstract
This review describes the characteristics and various applications of fish trypsins in detergents, carotenoproteins extraction from shrimp waste, and protein hydrolysates production. Considering their biological significance and their increasing importance in biotechnology, a thorough understanding of fish trypsins functioning is needed.
