Abstract
Ageing is a process, which includes many metabolic deteriorations. Body composition alterations particularly interests lean body mass and more specifically the muscle. The decrease protein synthesis and increase in the proteolysis lead to sarcopenia, definite like a loss of the mass, quality and force of the skeletal muscles. The disorders of the regulation of the protein metabolism, bad metabolic response to the food, are related to an alteration in qualitative and quantitative protein intakes in elderly, and on insulin resistance of peripheral tissues. A better knowledge of these mechanisms will make it possible, in the future, to treat them and especially to prevent them.
