Abstract
The article focuses on the influence of acculturation on the dining-out behavior of Chinese people in the United States. A popular acculturation scale, Acculturation Rating Scale for Mexican Americans (ARSMA), was adapted and applied to the Chinese population in a college town in New England. Then, the sample was grouped into clusters based on the three types of assimilation (i.e., integration, identification, and acculturation) and their dining-out behavior was examined across the groups. The results showed that the type of assimilation and acculturation did have some impact on dining-out behavior.
