Evaluation of the cold-active Pseudoalteromonas haloplanktis β-galactosidase enzyme for lactose hydrolysis in whey permeate as primary step of d-tagatose production

- Lactose hydrolysis above 96.0% was reached within 24 h in whey permeate at pH 7.0 and 23 °C.
- Stronger inhibition in the presence of glucose compared to galactose with cold-active lactase.
- Good operational stability of Pseudoalteromonas haloplanktis lactase enzyme.
- High perspectives for industrial implementation in view of d-tagatose production.
