Abstract
⺠Structures changes of glucoamylase under microwave irradiation were analyzed. ⺠α-Helix, β-sheet, β-turn and random coil were determined by CD-spectroscopy. ⺠Synergistic effect between microwave and glucoamylase on starch hydrolysis. ⺠Mechanism of microwave in accelerating starch hydrolysis with glucoamylase.
