Abstract
⺠Catalase thermoinactivation was studied in water containing additives. ⺠The inactivation parameters were estimated on the basis of some simple kinetic models. ⺠Stabilizing effects are strongly dependent on the working temperature. ⺠An isoconversional method was used to investigate the inactivation. ⺠The inactivation is significantly larger in the presence of substrate.
