Abstract
► Catalase thermoinactivation was studied in water containing additives. ► The inactivation parameters were estimated on the basis of some simple kinetic models. ► Stabilizing effects are strongly dependent on the working temperature. ► An isoconversional method was used to investigate the inactivation. ► The inactivation is significantly larger in the presence of substrate.
