Abstract
⺠We investigated the gelatin extraction from duck skin processing by-products using alkali and acid. ⺠Enzymatic hydrolysates from gelatin were scanned in vitro to search the biological activity. ⺠The enzymatic hydrolysates of gelatin from duck dermal processing by-products could be serve a natural antioxidant and antihypertension material.
