Abstract
⺠A novel endo-β-1,4-xylanase gene (xyn10C1) was cloned from Penicillium pinophilum C1. ⺠Deduced XYN10C1 shares 49.3% amino acid sequence identity with its closest homolog. ⺠Recombinant XYN10C1 produced in Pichia pastoris had thermoacidophilic properties. ⺠The enzyme was strongly resistant to most metal ions and pepsin and trypsin. ⺠XYN10C1 increased the filtration rate and reduced the viscosity of simulated mash.
