Abstract
ⶠSap aqueous phase contains low protein but exhibits high specific activities for phenol oxidases. ⶠThe aqueous phase of sap was subjected to ion-exchange chromatography on DEAE-Sephacel. ⶠThe bound protein was separated into peroxidase polyphenol oxidase and laccase. ⶠPeroxidase and polyphenol oxidase showed stability up to 70 °C while laccase had 60 °C. ⶠThus, mango sap a by-product in mango industry is a good source of these phenol oxidases.
