Abstract
► We produced Pickering emulsions with thermo-responsive cellulose nanocrystals. ► The nanocrystals align at the oil-water interface. ► Obtained O/W emulsions are very stable (+6 months' stability). ► Heating above the LCST of thermo-responsive brushes triggers emulsion breaking. ► Thermal responsiveness can be tuned by changes in ionic strength.
