Abstract
⺠We produced Pickering emulsions with thermo-responsive cellulose nanocrystals. ⺠The nanocrystals align at the oil-water interface. ⺠Obtained O/W emulsions are very stable (+6 months' stability). ⺠Heating above the LCST of thermo-responsive brushes triggers emulsion breaking. ⺠Thermal responsiveness can be tuned by changes in ionic strength.
