Abstract
⺠Reduced AGP is less thermostable than its oxidized counterpart. ⺠A heat-induced molten globule-like state was detected at pH 7.4, 5.5 and pH 4.5. ⺠pH and disulfide bridges act as modulators of the MG formation. ⺠Disulfide bridges are important for the binding and structural properties of AGP.
