Abstract
⺠Pleurotus eryngii, an edible mushroom optimized using response surface methodology of four-factor Box-Behnken design. ⺠The optimum levels of glucose, yeast extract, pH and temperature were determined for maximal yield of mycelial biomass and extra cellular polysaccharide. ⺠The Box Behnken design matrix was validated using real-time experiments. ⺠Extracellular polysaccharide of Pleurotus eryngii was found to be a glucan. ⺠Extracellular glucans significantly inhibited the neo-vascularization above 500 μg/egg.
