Abstract
- Particle-stabilized o/w nanoemulsions with a stability of at least 3 years were produced.
- A commercially available silica sol was used to stabilize nanoemulsions.
- Pickering nanoemulsions were produced using a high shear, commercially available homogenizer.
- The effect of different types of oils, amount of oil, oil viscosity, particle/oil ratios and processing conditions on the droplet size was examined.
- The stability of the emulsion is discussed in terms of oil solubility, Ostwald ripening and particle packing density at the interface.
