► Multicoated large oil droplets could be prepared by layer-by-layer deposition using polyelectrolyte dietary fibers. ► Multicoated large oil droplets were stable even under surfactant-free condition. ► Stability against pH change was mainly determined by pKa of outer layer coating material.
