Abstract
												⺠It is possible to generate foams with only water/protein mixtures. ⺠Foam production depends on the protein concentration. ⺠Foam production presents a threshold, similar to the CMC for a classical surfactant. ⺠Protein foams are heterogeneous and exhibit a relatively slow gravitational drainage.
